Perfect Autumn Breakfast

PUMPKIN PANCAKES WITH SAUTEED APPLES AND CHOPPED WALNUTS

Ingredients

  • 1 1/2 cups milk
  • 1 cup pumpkin puree
  • 1 egg
  • 2 tablespoons vegetable oil
  • 2 tablespoons vinegar (I use apple cider vinegar)
  • 2 cups all-purpose flour
  • 3 tablespoons brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 1/2 teaspoons pumpkin pie spice
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt

Directions

  1. In a bowl, mix together the milk, pumpkin, egg, oil and vinegar. Combine the flour, brown sugar, baking powder, baking soda, allspice, cinnamon, ginger and salt in a separate bowl. Stir into the pumpkin mixture just enough to combine.
  2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot. 

SAUTEED APPLES

Ingredients

  • 1/4 cup butter
  • 4 large tart apples - peeled, cored and sliced 1/4 inch thick
  • 2 teaspoons cornstarch
  • 1/2 cup cold water
  • 1/2 cup brown sugar
  • 1/2 teaspoon ground cinnamon

Directions

  1. In a large skillet or saucepan, melt butter over medium heat; add apples. Cook, stirring constantly, until apples are almost tender, about 6 to 7 minutes.
  2. Dissolve cornstarch in water; add to skillet. Stir in brown sugar and cinnamon. Boil for 2 minutes, stirring occasionally. Remove from heat and serve warm.  
Top pancakes with apples, chopped walnuts and warm maple syrup and devour!!
